When doing dips you want to protract your scapula - sort of push down with your shoulders while having straight arms if that makes sense. You just don't want to be in a shrugged position where your shoulders "touch" your ears. And yes, you need to maintain that position throughout the whole dip for proper form and to get the most out of the dip, it may be tough but try your best to keep your shoulders down and not shrugged, although it happens to all of us haha, don't worry about it too much.

i would recommed you doing normal dips until you gained enough basic strenght. than you can go to for example "leaning forwarddips", they build more chest strength however i would recommed you stick to normal dips and work regularly.
Dips are the exercise where i can see my best progress, i can remember the first time trying dips (i even could not hold the support hold for 10 secons) like it were yesterday.
and daniel is right, don't stress yourself.
