What will increase fat/weight is a calorie surplus - eating more calories than you really need, 90% of the time it doesn't matter if you eat carbs before bed, it might just make you uncomfortable if you go to sleep right after. The other 10% is Intermittent Fasting, where you eat for 8 hours and don't eat for 16 hours and you have bigger chances to burn fat, and maybe a few more factors if you're like Double-Endomorph or something lol (like you're an endomorph on top of an endomorph and you're extremely carb sensitive), but that's really unlikely haha.
It depends on your goals! Like gligor said - it will create a higher calorie surplus :)
